A Meal of a Salad

Salads are constantly evolving in my house.  I try something new, try it on my family and adjust the recipe accordingly.  I think I may have perfected this one (makes 2 meal sized salads)
The usual suspects:
1/2 avocado, mashed
About 2 tbsp white balsamic vinegar
1-2 tsp honey
1-2 tsp mustard
1 1/2 tbsp Miracle Whip
Salt to taste
Diced tomatoes
 
 
 

Mash the avocado and mixing all the dressing ingredients together and let sit for about 10 minutes (tomatoes are not pictured)

The supporting characters: Hard boiled egg, diced chicken breast, orange pepper, green onion.  You can be creative.

 

Mix everything together.   Pick your lettuce (I used spinach and head lettuce).  Toss and enjoy!
