I love chocolate- and having lots of energy. So why not whip something up that has chocolate and gives me lots of energy?
Like most of my creations in the kitchen, my Balls of Pure Energy didn’t come from a recipe. I just added a bit of this, and bit of that, and mixed it together until the consistency was just right. When I posted the picture on Facebook, I had so many requests for the recipe. I’ll give you the basic outline of what I did, but have fun making your own unique creation. Don’t have the exact ingredients? Swap in something else.
Ingredients:
About 15 dates- pitted
2 ripe bananas
1/4 cup Cocoa
1/3 cup Chia seeds
1/2 cup Hemp hearts
1/2 cup (ish) Almond flour
1/4 cup Coconut oil- melted
1/2 cup (ish) Coconut flour
Medium dried coconut for dipping
Method:
Soak the dates for a bit until they plump up. You can make the process quicker by soaking the dates in hot water.
Drain the water and blend dates and bananas in the food processor until smooth. Add the cocoa and blend again. I suggest tasting it at this point if you’re in the mood for something really sweet (just have a taste :).
Transfer the banana-date-chocolate goodness into a mixing bowl. Add in the rest of the ingredients and mix with a wooden spoon. Add more coconut flour if needed. You’ll know you got the consistency right if you can roll the mixture into little balls… which is what you’re going to do next.
Roll into balls, then cover in coconut flakes. Transfer to a lined baking sheet and stick the energy balls in the freezer. Once they’re frozen you can transfer them to a container or bag- and keep them in the freezer.
Don’t let the fact that they are frozen be a barrier to wanting to eat them all the time. They’re delicious frozen and at room temperature.
