Barbequed Tortilla Pizzas

I often wonder if I like healthy food because I know it’s healthy, or because I prefer the taste of it.  If take-out pizza was good for me, would I choose to pick up the phone and order in more often?

Thankfully, I don’t have to decide. I can have healthy and delicious- and eat my pizza too. Thank you to Bruce and Jenn Tennant for having me over for dinner- and making something so good, and so simple, that I had to share it!

 Tortilla Pizzas on the BBQ

Ingredients:
-Whole grain tortillas (6-8″)- count on 1 – 2 per person, depending on how hungry you are and how hard you worked out that day!
-Pizza Sauce- Jenn used salsa and ranch dressing (separately) for the sauce.  You can be creative
-Lots of fun toppings!  Think banana peppers, sauteed peppers and onions, green onions, mushrooms, tomatoes, spinach, olives, pineapple, feta cheese or sharp cheddar cheese, roasted peppers.  Be creative and use what you have in your fridge.

The method:
-Prepare pizzas (I won’t go into details- but spread sauce over the tortillas, top with toppings- you get the picture)
-Heat BBQ to high.  Once it’s hot, lower the temperature to low and let it cool for about 5 minutes.  Place the tortilla pizzas on the grill and cover for a few minutes until the cheese melts.  Rotate the tortillas on the grill (don’t flip them over, just rotate around so they are heated up evenly).  Once the tortillas are crispy, take them off.
-Cut into quarters and enjoy!
