Place turkey roast in my Dutch oven (any roasting dish will work)
Quarter an onion and put it on the bottom for a bed so the turkey didn’t touch the bottom of the pan (saves it from drying out) added 3 cloves garlic courses chopped.
Place roast on top of the bed of onions poured 2 cups of low sodium chicken broth over top added pepper on roast and baked a couple hours with thermometer.
Removed the roast and discarded onions and garlic and saved broth.
Add vegetables and rest of the carton of broth.
Ingredients
1 roast turkey (use turkey later for yummy sandwiches)
1 onion dices
3 cloves of garlic coarsely chopped
1 carton low sodium chicken broth
1 small red potato diced
1 lg carrot peeled and diced
6 Brussels sprouts chopped up
2 tomatoes diced
1 cup broccoli or cauliflower (cut smaller because they are going to get soft)
Added a little pepper, garlic powder and onion powder
