I made these muffins as a healthy treat for all the boot campers at the Turkey Burn Boot Camp on Thanksgiving Monday. I also gave some to my neighbours- and they were a hit.
Makes 48 muffins (you can half the recipe, but I would make the whole batch and freeze them, or give them away to friends as a healthy treat!)
Ingredients:
3 cups whole wheat flour
3 cups oats (whole or quick)
1 cup brown sugar
1/4 cup maple syrup
2 tsp baking powder
1 tsp baking soda
Dash of salt
1 tbsp cinnamon (I was probably more liberal- I love cinnamon!)
1 tbsp pumpkin pie spice
3 eggs, beaten
1/3 cup olive oil
1/2 cup milk
3 cups pumpkin puree (I used canned- but feel free to be wild and do it yourself!)
1 package dark chocolate chips (Try not to eat too many while baking 🙂
Heat oven to 375. Combine all the dry ingredients in a bowl. Whisk the dry ingredients (lazy way of sifting all the ingredients). Add all the wet ingredients and stir until mixed. Add chocolate chips at the end and mix a bit more.
Scoop into lined muffin tins and bake for 17 minutes. Let cool and enjoy!
