Tanja's Super-Secret Salad Dressing

I am often asked about salad dressings- which are healthy, which are not.  It’s easier to list salad dressings that are NOT good for you- so many commercial dressings are high in fat and sugar (sugar, glucose-fructose, corn syrup, etc) they take away from the benefits of eating a salad.
Whenever you can, a safe bet is to make your own.  This is my personal favourite.  It’s loaded with healthy fats courtesy of the avocado.
 
Tanja’s Super Secret & Ultra-Delicious Salad Dressing
Serves 4
1/2 ripe avocado, mashed
2 tbsp olive oil
2 tbsp white balsamic vinegar
1 clove garlic, thinly sliced
2 tomatoes, chopped
1/2 tsp Dijon mustard (optional)
Salt & pepper to taste
Combine all ingredients into a salad bowl.  Let the tomatoes marinate for half an hour or more so all the flavours can combine together.
Add your lettuce and other veggies, and mix it up.  Enjoy!
