Swiss Chard Soup

I LOVE green soup!  Apparently, so does my son Jacob.  He’s a relatively picky eater, but oddly enough, devours homemade Swiss Chard Soup (usually topped with a copious amount of Parmesan cheese).  Nonetheless, this soup is easy to make (because you’re going to puree the soup, there’s not need to chop the veggies neatly), and chock-full of healthy, nutritious vegetables.
Ingredients:
1 onion, coarsely chopped
1-2 tbsp olive oil or coconut oil
2 cloves garlic, chopped
2-3 carrots2-3 celery stalks, chopped
2 medium sweet potatoes or yams, chopped
1/2 – 1 Celeriac, chopped
Anything else you want to add… Turnip, Parsnip, Rutabaga… be creative!
4-6 cups Soup stock
At least 4 cups Swiss Chard (or kale, or spinach)
Salt & Pepper to taste
Method:
Saute all the veggies (except greens) in oil until they soften.  Add soup stock, bring to a boil, then let simmer for 30-45 minutes or longer.  Add greens, and let them wilt.  Blend with an inversion blender and enjoy.  Parmesan cheese is optional, but tastes good on top!  I’m sure this soup would also taste great with some beans added in, or pieces of sausage… as long as there’s some love in the mix!
