I suppose this could be called turkey chilli- but the original plan was for it to be a topping for salad or a filling for a taco. Then again, ‘a rose is still a rose’.
This meal meets the Fuel Target!
1 1/2 white onions, diced
1 bulb garlic, pressed
1 tbsp oil
1 package ground lean turkey (maybe a pound or so?)
2 peppers, diced
1 can black beans, rinsed
1 can corn, rinsed
3 cups (ish) salsa
Sautee the onion and garlic in oil until soft. Add the turkey and cook. Add peppers, beans, corn, and salsa. Cook for 20-30 minutes until.
I served this over a bed or lettuce with a pinch or shredded cheese. Yum!!
