Not sure what to do with all the leftover turkey from Thanksgiving? Try this delicious, nutrient rich dish. Makes a perfect lunch or dinner.
Ingredients to serve 1:
-Diced turkey meat (I used about 150 grams)
-1/2 apple, diced
-2 celery stalks, diced
-1 tbsp light mayo
-1/2 tsp curry powder
-2 tsp white balsamic vinegar
-spinach (I used about 4-5 cups, torn)
Mix the first six ingredients together in a bowl. Add the torn spinach, toss and serve. Simply delicious!
