1 pkg ground turkey
2 cans diced tomatoes (low sodium)
15-20 fresh mushrooms, sliced thin
1 green pepper, diced
1 red pepper, diced
1 large onion, diced
3 cloves garlic, minced
1 can red kidney beans, drained and rinsed
1 can black beans, drained and rinsed
1 can cannellini beans
1 can low sodium kernel corn
3 tablespoons chili powder
1 teaspoon cayenne
1 litre of low sodium chicken or vegetable broth
In a large pot, add turkey and brown over medium-high heat. Add onion, peppers, mushrooms, and garlic. Sauté for 5 minutes or until softened. Add half the chicken stock. Add chili powder and cayenne, stir well. Add the rest of the chicken stock, tomatoes, corn, black beans, cannellini beans and kidney beans, stirring well to combine. Reduce heat to low and simmer for 30-45 minutes.
Tip: Put a couple of extra containers in the freezer for an easy healthy meal later in the week.
